Pistachio pesto is a delicious savoury pesto with pistachios, artisan made in Bronte, a village in Sicily where the world famous pistachio nuts grow on the slopes of Mount Etna. 70% pistachio nuts are added to 20% of strong Sicilian olive oil and ground to a fine pulp. Then a second quantity of coarser ground pistachio puree is added to bring a crunchy texture to the pesto. Ideal with: The pistachio pesto can be used on bruschetta, crackers, warm toast, on meats and fish, ideal on cheeses. Or heated and mixed to cream/ricotta to create a sauce for pasta. A teaspoon of pesto and a tablespoon of mayonnaise makes an ideal dipping sauce
Ingredients: Pistachio 70%, extra virgin olive oil, salt and pepper.
