ELISIR DI BALSAMICO 12 yrs aged balsamic vinegar
Elisir di Balsamico 12 yrs aged balsamic vinegar is made in the North East region of Italy in the Roman town of Aquilea near the Adriatic Sea by a small artisan family run business, the Balsamic Vinegars are made by the Valpanera Winery using only the Refosco dal Peduncolo Rosso grape. One of the oldest grape in Italy dating back to the Romans.
Aceto Balsamico di Modena is the most popular and well know of the balsamic world but there are so many variations in different parts of Italy that are yet to be explored. Other varieties of grapes can be used to produce balsamic vinegar, one of them being the Refosco Dal Peduncolo Rosso grape grown only in the Friuli Venezia Giulia region called Elisir di Balsamico
The procedure of the Balsamic vinegar is labour intensive and lengthy affair like a good wine and whisky, this is reflected in the price and some may question the quality of a vinegar that can be bought from a supermarket at a low price, for commercial production white wine vinegar and sugar is added to emulate the traditional vinegar.
The grapes are cooked in stainless steel vats and are then stored in French oak barrels, the process is all natural and contains no thickening agents, no colorants, preservatives of flavourings, just natural occurring sulphites which are present in wine. Over time the balsamic will thicken due to evaporation and become almost like treacle when pouring.
The uniqueness of this balsamic, is that the grape in grown in a sandy alluvial soil, making the taste quite distinct, due to the various minerals present.
Ideal for dipping with your olive oil, drizzled in your salad for extra intensity, but can also be used to cook with. Can be a very good marinade for your meats, ideal with a red onion and balsamic tarts.
Drizzled over a scoop of vanilla ice cream and strawberries
To have with strong blue cheeses to counter balance the flavours.
Drizzled over Parmesan cheese.
Ideal with your meats and roasted potatoes.
Ideal with cherry tomatoes, the acidity of the tomatoes are sweetened with the 12 year old.
