A delicious savoury almond pesto, artisan made in Bronte, a village in Sicily.
Almond nuts are added to olive oil and ground to a fine pulp. Then a second quantity of coarser ground almond puree is added to bring a crunchy texture to the pesto.
The almond pesto can be used on bruschetta, crackers, warm toast, on meats and fish, ideal on cheeses. Or heated and mixed to cream/ricotta to create a sauce for pasta. A teaspoon of pesto and a tablespoon of mayonnaise makes an ideal dipping sauce.
Ingredients: Almonds 65%, extra virgin olive oil, salt and pepper.
