orange polenta cake

This is an absolute family favourite , the intensity of the orange and orange zest fills the air and the grittiness of the polenta washed down with a strong espresso makes this cake in our top 10. We also added a couple of teaspoons of our orange blossom honey to make the glaze.       honey group





200g of unsalted butter           polenta-cake-3

200g of caster sugar

4 medium eggs

145g of polenta flour

200g plain flour

2 tsp of baking powder

2 oranges

For the glaze:

120ml of orange juice

50g sugar

50gr orange blossom honey

Pre-heat oven to 160C and line with some baking parchment a round cake tin. Cream the sugar and butter until well combined, then add one egg at a time.  Add the polenta flour and baking powder. With the 2 oranges, zest and juice them (set aside 120ml for the glaze) and add in to the cake mix. Now you are ready to transfer the mix into the tin and bake for 40 to 45 or until golden brown. When cooked turn out into a wire rack to cool.

To make the glaze, in a pan add the sugar, orange juice and honey and let it simmer for a couple of minutes or until the sugar has melted allow to cool, then insert some skewers in the cake to make tiny holes and drizzle the glaze over the cake. Decorate with orange peels if you like or icing sugar. Buon appetito!!!
